This section is for people who are looking to get the best out of there El Cheapo smokers.
The reality is there are hundreds of different cookers on the market these days utilising either gas, electricity, charcoal, or wood. Its is our preference to cook with wood or charcoal, predominantly as we have an abundance of Iron Bark in Tasmania. Hence, this section will focus on charcoal and wood burners only.
As our appetite for American style low and slow has grown so to has our smoker collection. The reality is if you are a true Pitmaster you should be able to get good results on what ever you cook on! Cheap or expensive all smokers need to be understood. We say "you have to know how to drive your pit". You need to work with your Pit to understand its positive and negative traits and work toward reducing the negatives and enhancing the positives.
To give you an example of this we recently won 1st Prize in a Lamb category using a modified El Cheapo kettle. But it wasn't the brand or design of the original kettle that cooked the Lamb to prize winning standards it was the modifications and the technique employed (See Hot Rod link below).
